How to cook roast chicken

Ingredients

  • A 1.5 kg chicken
  • Some butter
  • Clove or two of garlic
  • An orange
  • An onion
  • A bunch of herbs
  • Olive oil
  • 500ml chicken stock
  • Salt 'n' pepper

Times

  • 1:30 Roast (baste every 20min). Adjust for your chicken.
  • 20 min rest

Method

  1. Oven pre-heated to 180 fan. Or whatever the equivalent is for your weird oven.
  2. Chop the onion into slices.
  3. Line a roasting tray with the onion slices.
  4. Crush the garlic and mix with the butter.
  5. Shove the butter and garlic mix under the skin at the top of the chicken.
  6. Cut the orange into quarters and shove up the chicken.
  7. Throw the herbs in there too.
  8. Slather some olive oil all over the chicken with your hands.
  9. Salt and pepper the chicken.
  10. Put the chicken on top of the onions.
  11. Pour the chicken stock in the pan.
  12. Stick the chicken in the oven and leave it there for an hour and a half.
  13. Baste the chicken every 20 minutes.
  14. Take the chicken out of the oven and out of the dish, and leave it to rest for 20 mins on a board, dumping out any juice into the pan.
  15. Chop up and serve.

Gravy

Fuck making gravy with the pan juices. Just buy some from sainsburys.
