How to cook roast chicken
Ingredients
- A 1.5 kg chicken
- Some butter
- Clove or two of garlic
- An orange
- An onion
- A bunch of herbs
- Olive oil
- 500ml chicken stock
- Salt 'n' pepper
Times
- 1:30 Roast (baste every 20min)
- 20 min rest
Method
- Oven pre-heated to 180 fan. Or whatever the equivalent is for your weird oven.
- Chop the onion into slices.
- Line a roasting tray with the onion slices.
- Slice the garlic up quite thin.
- Shove some butter and the garlic under the skin at the top of the chicken.
- Cut the orange into quarters and shove up the chicken.
- Throw the herbs in there too.
- Slather some olive oil all over the chicken with your hands.
- Salt and pepper the chicken.
- Put the chicken on top of the onions.
- Pour the chicken stock in the pan.
- Stick the chicken in the oven and leave it there for an hour and a half.
- Baste the chicken every 20 minutes.
- Take the chicken out of the oven and out of the dish, and leave it to rest for 20 mins on a board, dumping out any juice into the pan.
- Chop up and serve.
Gravy
Fuck making gravy with the pan juices. Just buy some from sainsburys.
