+Get some thick-ass steaks. Get them to room temp.

+Pre-heat a stainless steel pan - 13 out of 14 on mine. Maybe heat at 8 for a couple of mins before blasting the empty pan.

+Dry the steaks, then oil with a bit of not-olive-oil.

+1 minute a side until the crust looks good, then drop the temp to mayabe 8, and keep going till the inside is at 55 degrees.
