How to cook tomato and chili prawn pasta

This is a chuck it in a pan thing. Don't worry about the amounts.

Ingredients

  • 250g pasta - probably fusilli
  • 2 beef tomatoes
  • 2 cloves garlic
  • 1/4 to 1/2 tsp chili flakes
  • 1/2 lemon
  • 60g bag of rocket
  • glug of olive oil
  • 300g cooked prawns

Method

  • Get a big pot of salted water boiling for the pasta.
  • Roughly chop the rocket. Looks like too much, but it's not.
  • Chop up the tomatoes into wee bits, seeds, watery bits and all. Remove any hard white bits though.
  • Throw the chopped up tomatoes in a saucepan or big frying pan (big enough to hold all of the ingredients).
  • Crush the garlic in.
  • Chuck the chili flakes in there.
  • Glug some olive oil in the pan too. Maybe a tablespoon?
  • Fling a pinch of salt in as well.
  • Cook the tomatoes on a medium heat till they're not watery any more. Not thick, but not watery. Stir it fairly frequently.
  • Keep the tomatoes bubbling away and chuck the pasta in the pasta pot, cook for however long it takes. Maybe 10 min. Stir occasionally.
  • When the pasta's a couple of minutes from done, throw the prawns, lemon, and rocket into the tomato pan to warm up.
  • When the pasta's done, drain it and throw it in with the tomatoes.
  • Stir and serve.
